April showers bring me flowers… and also a strawberry shortcake with lemonade. When I think of the Month of April, I think of flowers, rain, fresh clean air, and fruit. So I decided to create a very simple and easy to make strawberry shortcake with a nice tall glass of old fashioned lemonade. Enjoy!
Strawberry Shortcake
Ingredients:
-
1 quart (4 cups) strawberries, sliced
-
¼ cup sugar
-
2 ⅓ cups Original Bisquick® mix
-
½ cup milk
-
3 tablespoons sugar
-
3 tablespoons butter or margarine, melted
-
½ cup whipping cream
Directions:
-
Heat oven to 425°F. In large bowl, mix strawberries and 1/4 cup sugar; set aside.
-
In medium bowl, stir Bisquick mix, milk, 3 tablespoons sugar and the butter until soft dough forms. On ungreased cookie sheet, drop dough by 6 spoonfuls.
-
Bake 10 to 12 minutes or until golden brown. Meanwhile, in small bowl, beat whipping cream with electric mixer on high speed until soft peaks form.
-
Split warm shortcakes; fill and top with strawberries and whipped cream.
Old Fashioned Lemonade
Ingredients:
-
1 ¼ cup grenadine
-
1 cup lemon juice
-
⅔ cup sugar
-
4 cups water
-
1 cup crushed ice
Directions:
-
Mix the sugar and water in a pitcher.
-
Add the lemon juice and grenadine when the sugar dissolves.
-
Make adjustments to taste. Some people may need more sugar and lemon, or more water if the taste is too strong.
- Add the crushed ice and serve.
